Ingredients:

  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1/2 cup corn kernels
  • 1/4 cup cilantro, chopped
  • 4 large whole wheat tortillas

For the Avocado Cilantro Sauce:

  • 1 ripe avocado
  • 1/4 cup vegan mayonnaise (or Greek yogurt for a creamier texture)
  • 1/4 cup cilantro
  • Juice of 1 lime

Instructions:

  1. Prepare the Burrito Filling:

    • Sprinkle in smoked paprika, cumin, turmeric, garlic powder, salt, and pepper. Stir to coat the protein evenly.
    • Add diced red onion, bell pepper, and corn. Cook for another 5-7 minutes until the veggies are tender but still slightly crisp.
    • Remove from heat and stir in chopped cilantro.
  2. Make the Avocado Cilantro Sauce:
    • In a blender or food processor, combine avocado, vegan mayo, cilantro, lime juice, garlic powder, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
