Ingredients
For the Meatloaf:
1 ½ lbs ground beef (80/20 for juiciness)
1 medium onion, finely chopped
1 green bell pepper, finely chopped
1 cup shredded provolone cheese (or mozzarella for a milder flavor)
1 large egg
1/4 cup almond flour (or breadcrumbs, if not low-carb)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
Salt and pepper, to taste
For the Topping:
1 cup shredded provolone cheese (or mozzarella)
1 tablespoon olive oil (for sautéing)
1/4 cup sliced bell peppers (optional, for extra crunch)
1/4 cup sliced onions (optional)
Instructions
Step 1: Prepare the Vegetables
Preheat your oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper.
In a medium skillet, heat the olive oil over medium heat.
Sauté the onions and bell peppers for about 5-7 minutes until softened and slightly caramelized. Remove from heat and let cool slightly.
Step 2: Prepare the Meatloaf Mixture
In a large mixing bowl, combine the ground beef, sautéed onions and peppers, shredded provolone cheese, egg, almond flour, garlic powder, onion powder, oregano, salt, and pepper.
Use your hands or a spoon to mix everything until fully combined, but be careful not to overmix to keep the meatloaf tender.
Step 3: Shape the Meatloaf
Transfer the meat mixture to a baking sheet or loaf pan, shaping it into a loaf shape (about 9×5 inches).
If desired, top the meatloaf with additional sliced bell peppers and onions for extra flavor and color.
Step 4: Bake the Meatloaf
Place the meatloaf in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
After baking, top the meatloaf with the 1 cup shredded provolone cheese and return it to the oven for an additional 5 minutes to melt the cheese.
Step 5: Serve & Enjoy
Once the cheese is melted and bubbly, remove the meatloaf from the oven. Let it rest for about 5 minutes before slicing. Serve the Philly Cheesesteak Meatloaf with a side of keto-friendly veggies, cauliflower mash, or a simple salad for a complete meal.
