Keto Chocolate Nut Clusters
Ingredients:
1 cup sugar-free dark chocolate chips or chopped dark chocolate (at least 70% cocoa)
1 cup mixed nuts (e.g., almonds, pecans, walnuts), roughly chopped
1/4 cup unsweetened shredded coconut (optional)
1 tablespoon coconut oil
1 teaspoon vanilla extract
Pinch of salt
Instructions:
In a microwave-safe bowl or using a double boiler, melt the sugar-free dark chocolate and coconut oil until smooth.
Stir in vanilla extract and a pinch of salt. Mix well.
Add the mixed nuts to the melted chocolate mixture. If using shredded coconut, add it as well. Stir until the nuts and coconut are evenly coated.
Line a tray or a plate with parchment paper.
Using a spoon, drop small clusters of the chocolate-nut mixture onto the parchment paper.
Place the tray in the refrigerator for at least 30 minutes or until the clusters are set.
Once set, remove the clusters from the parchment paper and store in an airtight container in the refrigerator.
