Broccoli Feta Fritters

Ingredients
4 small crowns broccoli (about 3 cups, chopped)
3 eggs, lightly beaten
5 tablespoons all-purpose flour (or almond flour for low-carb)
1/3 cup shredded mozzarella cheese
3 oz feta cheese, crumbled
1/2 teaspoon garlic powder
Salt and pepper, to taste
Olive oil (for frying)
Instructions
Step 1: Prepare the Broccoli
Steam or blanch the broccoli crowns until just tender, about 3–4 minutes.
Drain the broccoli and chop it into small pieces. You can use a food processor for a finer texture, but make sure not to over-process.
Place the chopped broccoli in a clean kitchen towel or paper towels to remove any excess moisture.
Step 2: Make the Fritter Mixture
In a large bowl, combine the beaten eggs, all-purpose flour, mozzarella cheese, feta cheese, garlic powder, salt, and pepper.
Stir in the chopped broccoli and mix everything together until well combined. The mixture should be thick enough to hold its shape when scooped.
Step 3: Cook the Fritters
Heat olive oil in a large skillet over medium heat.
Using a spoon or ice cream scoop, drop spoonfuls of the fritter mixture into the skillet. Flatten them slightly with the back of the spoon to form patties.
Cook the fritters for about 3–4 minutes per side, or until golden brown and crispy. Be sure to flip carefully to avoid breaking them.
Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
