Loaded Zucchini Bake
This loaded zucchini bake is a delicious and hearty dish that’s perfect as a main course or side. Packed with zucchini, tomatoes, bacon, cheese, and a blend of savory flavors, it’s a comforting and nutritious option.
Ingredients:
3-4 medium-sized zucchini (sliced)
2 tomatoes (sliced)
1/2 white onion (sliced)
Bacon (use most of a bacon package, leaving about 3 pieces)
1 cup shredded sharp cheddar cheese
Grated parmesan cheese (to taste)
Olive oil (for coating zucchini)
1/4 cup ghee or coconut oil (to dot on zucchini)
Salt and pepper (to taste)
Garlic powder (to taste)
Fresh oregano leaves (for garnish)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Cook the Bacon:
Fry the bacon in a skillet over low heat until crispy. Crumble the cooked bacon into small pieces and set aside.
Prepare the Vegetables:
Slice the zucchini, tomatoes, and onion.
Layer the Zucchini:
Arrange the sliced zucchini evenly in a 9×13 baking dish, covering the bottom of the dish.
Season the Zucchini:
Lightly coat the zucchini with olive oil and season with garlic powder, salt, and pepper.
Add Ghee/Coconut Oil:
Dot the zucchini with about 4-5 portions of ghee or coconut oil.
Layer the Vegetables:
Add a layer of 1/4 sliced onion.
Add a layer of sliced tomatoes.
Add Bacon:
Sprinkle the crumbled bacon on top of the vegetable layers.
Top with Cheese:
Layer shredded sharp cheddar cheese evenly over the bacon.
Then, add a layer of grated parmesan cheese over the cheddar cheese.
Garnish:
Sprinkle freshly harvested oregano leaves on top for added flavor.
Bake:
Cover the dish with aluminum foil and bake for 15-20 minutes.
Remove the foil and continue baking for another 15 minutes, or until the vegetables are tender and the cheese is golden brown.
