Quick & Easy 4-Ingredient Cheese and Bacon Rolls

🥖 Makes: 6 fluffy rolls

Ingredients:

  • 2 cups (250g) self-raising flour
  • 1 cup (250g) plain Greek yogurt
  • 1 cup (100g) shredded cheese (cheddar or a cheese blend)
  • ½ cup (100g) cooked bacon bits (or finely chopped cooked bacon)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. Make the Dough:
    • In a mixing bowl, combine the self-raising flour and Greek yogurt.
    • Mix until a dough forms. If it’s too sticky, sprinkle in a little more flour.
  3. Add the Fillings:
    • Gently fold in half of the shredded cheese and half of the bacon bits into the dough.
  4. Shape the Rolls:
    • Divide the dough into 6 equal portions. Roll each into a ball and place them close together (touching slightly) on the prepared tray.
  5. Top and Bake:
    • Sprinkle the remaining cheese and bacon evenly over the top of the rolls.
    • Bake for 20–25 minutes, or until golden, risen, and the cheese is melted and bubbling.

Tips:

  • Use smoked or maple bacon for extra flavor.
  • These are best served warm with butter or alongside soup.
  • To make them vegetarian, simply swap bacon for chopped sun-dried tomatoes or sautéed mushrooms.
